Vintage Port
Our Vintage Port is produced predominantly
from the Marechal Foch grape. The traditional method of making a port wine is
employed; to halt the fermentation process, pot-stilled brandy is added to the
must, so that a degree of residual sugar remains in the finished wine. The wine
is then matured in small, older American oak barrels for one year, after which
time it is bottled, and then aged in the bottle prior to release. Our winemaker
has been perfecting this technique using our own grapes since 1988, and is
pleased with the results thus far. Upon release, our Port has a rich,
ripe, black cherry character, with hints of vanilla and mocha. As it matures,
it develops more of a dark cherry jam quality with pronounced dark chocolate
overtones. It is a delicious, unique wine that will develop and age for many
years; one achievement of which our winemaker is most
proud.
