Dolcina
Our ice wine
style Dolcina is made exclusively from estate grown fruit hand harvested at the
very end of the growing season. Extended hang time develops rich late
harvest characters further intensified by flash freezing of the grapes.
Only the sweetest pressed juice is used in the production of Dolcina.
Fermentation takes up to three months with temperatures peaking at low 48 °
-50 ° F- this long, slow, cool simmer is what develops Dolcina into an
intense, lush dessert wine with aroma and flavor profiles of honey, pear and
apricot.
